When attaching an elbow fitting (http://www.aircraftspruce.ca/catalog/hapages/an822.php) to a fuel valve (or anything else, for that matter), how can you have it oriented in a particular direction AND ensure it is leak-free?

Carlos, I could not use that fitting.with the Andair fuel selector valve, tighten leak free and get the proper orientation. I eventually used banjo fittings to get the proper orientation. -- Jay

Great question Carlos:
Here are some points to follow:
1 - Use a Fuel Proof Thread Sealant. This is especially true when dealing with similar metals being tightened together - Example: Aluminum to Aluminum.
If this is the case then Galling becomes an issue.
2 - Since you are dealing with pipe threads you only need a 3 thread engagement for a seal to be good. So, what you then use is the ADDITIONAL rotation/thread engagement for the lining up.
3 - This part is a bit more difficult and requires lots of additional thought... Replace the NPT with some other type of thread arrangement. Maybe a UNION, or a flair fitting.
Side note: It is always best if you can stay away from 90 Deg bends in a fuel system. Each bend reduces the flow rate and can cause caviation. Smooth round bends are best. Yes, I know when all else fails sometimes you are forced to go the route of 90 deg bends.
