So how would one know when motor / engine mounts need replacing?

I replace them on condition. Generally, you will see large cracks that look like weather cracking or the shock mount will start to shrewd itself.
Sagging isn't too much of a problem on the later Tiger mounts because they have 4 ridge sections in the shock that won't let it go very far.
In Cheetah shock mounts, sagging can be an issue. Look for the bottom shocks to be bulging excessively and the engine obviously sagging.  
I replace them all on engine overhaul, regardless of condition.
