Here is a little bit more simple:
You build it? ..... You fly it! or get a test pilot.
There was a bush pilot here (some years ago), a good friend of my father. That went a little farther.
He had a real beautiful Cessna 195. Everytime he had his plane serviced. He always flew with the mechanic the test flights... I think his best waranty of a well made repair

It is even more restrictive than the message below indicates. After plane
is finished, it is inspected by the PFA, and then you must pay a PFA test
pilot to do the test flying it before you can begin to fly it. Any
structural repairs must be approved by the PFA. There are probably more, but
we are blessed (or cursed) with less restrictive regulations.

You missed the entire point.
IF you build it; it must meet English PFA standards with NO deviation from
the plans.
After building, you hire the PFA inspector. IF he passes it, then you hire
the PFA test pilot.
If it passes the flight testing by your paid PFA test pilot, you can then
fly it.
You have no options!
It is like paying the EAA to do all this for your Zenith.

Gary-
I think it would be better insurance if the mechanic flew the test
flight with his lover. I wouldn't want to be up with the mechanic on the
test flight and hear "Did I remember to- Oops"!

It's also possible the mechanic wanted to go to make sure all repairs and
service were adequately addressed.
