I’m working on the fuselage side skins and it says to enlarge the wire run hole to the wings and install grommets that can be purchased from Van’s, but are not included in the kit.  This is section 29-15.
 
Can anyone make a recommendation what size hole and grommet part number works for this?  I plan on installing Duckworks, Archers, LED indicators, strobes,  etc.  Basically the works.  Do I run all electrical, coax, pitot, etc. through this hole?

Those grommets could be any size based on the builder. One bit of
advice...you're probably going to want some grommets of various
sizes as you get further along. You may want to purchase a
bunch with a little variety. I had to buy many extra for those
lightening holes in the vertical thin bulkheads on the fuselage
side below the door for wire passthroughs. Stein has lots
of grommets, and ACS has even more sizes. It's probably not too
critical to size the one you're worried about with tons
of accuracy. You can always use RTV to keep it sealed later
if needed. What I did for sizing some is to just cut little 3"
pieces of wire and when I knew I had all the sizes and quantities
that I'd need, I stuffed them through a grommet/conduit/hole
and tried it out. I dont' know if I put my pitot tube in the
same hole....I think I ran that separately just due to where
it wanted to come through.

I know that's not a real answer, just a theory, but it may help.
There's going to be a lot of improvising in the remaining steps
of the project.
