I just bought a Kitfox V with a 912s and I don't know a thing about how to fly it (or even fire it up.)

The seller was uninformed too but he did start it and we taxied it. Other than that he and I did manage to get the wings folded for trailering but I'm not confident I could unfold them without forgetting something.

I thought looking at a POH would be a good place to start. Can anyone help me here? And are there other resources I can consult to learn more about my new baby?

John McBean at Kitfox LLC can probably get the PoH. I highly recommend
reading "Stick and Rudder" and Ed Downs' book "How to Fly a Kitfox". Both
available at various places on line.
